I've often wondered if the large jar of opened mayonnaise in my fridge is still good. It doesn't smell funky. It doesn't seem to be growing mold--at least from what I can tell. It's well past the "sell by" date, but it still looks edible. Do I dare use it on my sandwich? Why not... I've got to live dangerously every once in awhile.
